This is yummy. Grilled eggplant with feta and mint. I used a mild paprika and basalmic vinegar instead of sherry. 🙂

And I don't smother it in gravy like so many places do. Just enough gravy to melt the cheese and add a great flavour. 🙂
Tomatoes are fruit. So are olives. Anyway, I love pineapple on pizza. For me, It's the combination of sweet and salty that works well in many dishes. :)
