I'm not sure exactly what Il Fornello has done, but roasting garlic will make it sweeter, and turn it into a consistency that can be used as a spread.

Yes, this is a good way to do it. Try it in mashed potatoes tomorrow. Delish! 3 heads of garlic will do about 2 pounds of potatoes. It sounds like a lot, but the roasting mellows the garlic. Add some milk or cream and butter, salt and pepper, and you have an amazing dish of mashed potatoes.
