If anyone has been to Il Fornello at some point I'm sure that some of you have tried out their bread with carmelized garlic. Basically, this is garlic pieces that can be spread into the bread or bun. Does anyone know how to reproduce this?

Yes, this is a good way to do it. Try it in mashed potatoes tomorrow. Delish! 3 heads of garlic will do about 2 pounds of potatoes. It sounds like a lot, but the roasting mellows the garlic. Add some milk or cream and butter, salt and pepper, and you have an amazing dish of mashed potatoes.
