LUSCIOUS CHOCOLATE-ORANGE CAKE
½ cup chopped pecans 125 mL
1/3 cup firmly-packed brown sugar 75 mL
1 cup large chocolate chips 250 mL
½ cup butter or margarine 125 mL
1 cup granulated sugar 250 mL
1 tsp. grated orange rind 5 mL
1 tsp. vanilla extract 5 mL
2 eggs
1 cup sour cream 250 mL
2 cups all-purpose flour 500 mL
2 tsp. baking powder 10 mL
1 tsp. baking soda 5 mL
¼ tsp. salt 1 mL
Preparation: Preheat oven on Bake to 350°F (175°C). For streusel mixture, combine pecans, brown sugar and chocolate chips; set aside. In a large bowl beat butter and sugar together until light and fluffy. Add orange rind, vanilla, eggs and sour cream; mix well. In a separate bowl combine flour, baking powder, baking soda and salt; add to the creamed mixture and mix lightly, just until combined. Spread half the batter in the bottom of a 9" (23 cm) greased springform tube pan; sprinkle with half of the streusel mixture. Cover with remaining batter and sprinkle the rest of the streusel mixture evenly over the top. Bake at 350°F (175°C) for 35 to 40 minutes, until golden. Cook cake before removing from pan.
Oven time: 35 to 40 minutes.
Yield: 8 to 10 servings.
