Me being of the vertically challenged variety (about 5'6") am wondering how important height is in a date/couple/fuck-buddy/wife. There's a very attractive lass who is at least 6 - 8 inches taller than me. I'm pretty sure I could score at least a date, if not more, but have been hesitant to proceed due to the height difference.

For me, I don't have a problem with it and agree that you should got for it. I think that it is old school thinking that the guy has to be taller, just as guy should be the one asking the girl on a date.
This sort of question is al,ost impossible to answer as everyone ( in this case ) women are gonna have different preferences. The only way taht youre gonna find out what this particular womans preference is, is by asking her out and see what her answer is. If she says yes, then you obviously know that she is comfortable with you but this sounds like this is an issue for you where even though you may date her it may still bother you that she is taller than you and you might subconsciously sabatoge the relationship. Wow, I never thought I would ever use the words subconsciously and sabatoge in the same sentence.
Picking up on Annalee's theme, I'm not tall only 5-8 but when in the pub the girls flock to me when they see I can touch my forehead with my tongue. I only unroll it for special occasions.

Most chicks that I've met are looking for a guy that's 6-foot tall. That seems to be their ideal. I doubt an inch or two either way would matter though. And I also doubt chicks are passing due to not being 6-foot when there's so many other things that matter. Like the size of your wallet!
