So I had purchesed a fantastic breaded chicken cutlet at St. Lawrence Market and had planned to make chicken parm tonight. Get the fixings ready and realize crap! No tomato sauce. Had to improvise as the SO was grumpy and hungry tonight so I used SALSA....
Sauteed redpeppers, mushroom, onion, garlic and oregano, then added the salsa till it reduced a bit. Layered it over the cutlet when in was cooked. Topped with parm.
Damned if it didn't work out beautifully.
How do I know?
When your SO comes home after a rough day, grumpy and wanting to vent........and when all is said and done.........unasked for and enthusiastic BJ...........
