For marinades I like to use things that are slightly acidic like citrus juices or small amounts of vinegar...... it helps to tenderize the meat. I like pineapple juice but that's just my own thing.

Other's will argue that a good cut of meat needs nothing others than salt and pepper.

I prefer butcher shops that deal in local meats that are grass fed, chemical free (ideally organic but chem free is fine). really depends on where you are in the city. St Lawrence Market, Kensington, the Healthy Butcher,......there's another one that's escaping me a name that starts with a J,

Marinades really do nothing but to the outside edge of the steak and burns off when cooking. Try a nice salt spice rub with steak at room temperature and leave it for 30 mins. The good steaks it is a crime to mess with them. For low grade cuts a good 12 hour brine...gal of water, cup of salt, half a cup of brown sugar, then you could do the crock pot thing or oven on low.

You should never use a marinade on a steak. A little salt just before putting it on the grill is all you need.

If your steak needs to be tenderized then it is not a good steak!

Actually, I have heard that Costco sells great steaks.
They do... if you know what you are looking for you can get really good steaks there. I'll buy a whole beef tenderloin and cut it into filets.

just because you get good cut of meat doesn't always result in a great steak.. if you can't cook it doesn't matter how good the cut is.. everyone develpos a cooking style.. experment and you will find your own..

I tried aged steaks from here http://stuartcarroll.ca/ and they were reasonably priced.

There is also a Place off St Clair on Gunns rd across from the St Helena Meat Packers plant that often advertises 4 striploin steaks for $14.

No Marinade necessary for a great steak but just salt. If you must season further then maybe Montreal Steak Spice.

Don't overcook beyond medium rare.

No steak sauce necessary but lots of sauteed onions and mushrooms.

A dollop of cream cheese with some spiced up chipotle in adobo sauce puree is good too.

Buy Rib steaks. But only buy them if they are from the first six ribs. Never buy a boneless rib eye. Rib steaks need the rib bone attached for flavour. Can't believe people put pineapple juice or other crap on a steak. If you really have to marinate a steak finely crush a whole clove of garlic and then put the garlic in one of those freezer bags that seal. After the finely crushed garlic is in the freezer bag add enough first press Olive Oil in the bag to cover half the thickness of the steak. Leave it in the fridge for at least 24 hours. Olive oil is acidic and will help tenderize the steak. Cheers GB
