I get Ma'Fi'A pizza from my local mobster. His restaurant is a money laundering business, so he need to keep the customers coming in by making the best pizza with ample ingredients.

Sauce: combination of Roma/beef tomatoes with Garlic, Oregano, Rosemary

Toppings: Always Pepperoni, onions, ham, green pepper. Sometimes add maple bacon, chicken, mushrooms.

I prefer thin crust pizza, so I try to limit the number of toppings or the crust gets soggy. San Marzano tomato sauce, mozzarella, whole cloves of roasted garlic, Kalamata olives, sundried tomatoes, goat cheese, hot soppressata or chorizo, baby spinach and cracked black pepper. Thin crust and well done. Pi Co makes a good one of these.

Alternate toppings that I enjoy, but never piled on the above pizza:

- Anchovies
- Roasted red peppers
- Green olives
- Feta cheese
- Banana peppers

Standard is Sausage, Bacon, mushrooms, green olives, sliced tomato, cheese.

Happy to do a chicken and red onion flatbread too when out.

Sometimes I will add anchovies,but not cooked on it, raw after.

I see a lot of people like mushrooms. The only way I'd put them on a pizza, is if they're sautéed. Fresh mushrooms are 80-90% water which is released when cooked, resulting in a soggy pizza. Which is okay if you like limp, soggy pizza.

Sausage,/pepperoni, onions, green olives is my go to combo. Occasionally will sub green peppers for the olives.
