I'll go for true. The early SSs, with their coarse carbide component, could not retain a sharpened edge.

Btw, although non-stainless steels are (as you say) commonly referred to as carbon steels, the hardness of stainless steels also is determined by the percentage of carbon in the alloy. Just saying.

Carbon steel is harder than stainless steel and will hold an edge better. Carbon steel lost popularity because it is not shiny and does not have the rusrt resistance that stainless steel has.

The US Congress in 1856 passed the Guano Islands Act. This granted the mining rights to any US citizen who landed and hoisted the stars and stripes on a previously unclaimed (and guano-laden) island.
