If you are flying south in January February, go with Air Transat, they have bigger planes, so you get less turbulence when you cross the jet stream and most of the trip.
Last year I flew to Cuba in January on Sunwing (first time) and I spilled 2 rum and cokes...turbulence was terrible. My friend is an AC pilot and he said bigger planes are better that time of year.
Of course, turbulence is turbulence if it is bad weather.

We always go someplace warm in the winter. The last 5 or 6 years we have flown Sunwing. We pay the extra and get the "elite plus" package. This gets us seats with extra leg room, additional weight allowance, and expedited ticket processing and boarding at Pearson. Booked with Sunwing for 2016. The airline food is what it is. Don't board hungry!

I flew Transat to Europe 2 years ago.

Excellent service, newer plane, price was right. Far better than AC.
That is complete bull shit. You've obviously never flown Air Canada. As much as people claim to hate them, there is no way Transat or Sunwing is a better experience.

Used both multiple occasions. I must admit Air Transat has improved tremendously the past decade. My last flight to Ireland a couple years ago was smooth sailing. Slight delay on the takeoff but decent comfortable seats, food was ok. I just wish they had hotter flight attendants.
Sunwing I've only used to fly down south to Mexico and Bahamas. It was adequate - nothing special but nothing egregious.
Same experience with Sunwing which is the default airline for my trips to Cuba (always flight 680 and 681 it seems).

AC is usually more expensive. Maybe better I guess.

But there is. Air Canada does not fly to Cuba. Air Canada Rouge does, and I have never had a worse service on any flight, domestic, international or charter to Mexico/Cuba, as I had on Rouge a couple of weeks ago. (and I have flown to mexico/cuba more than 50 times)
I had never before been on a flight where pillows were not available to regular economy passengers. That is a first. Next, Rouge will only allow Premium class passengers access to washrooms. I will never go with Air Canada vacations again.
