a few tips

After many dinners of various types I would offer these tips:
1. Try to plan a meal which is either mostly done ahead of time or very simple to prepare while guests are present. I read somewhere that if you are not spending 90% of the evening with your guests you are saying they need a good meal more than your company.
2. Candles are magic. Unscented and one per guest plus one more. Turn down the lights and even simple pasta looks really special.
3. Real cloth napkins.
4. Check carefully in advance for food allergies or extreme food dislikes. Nothing worse than proudly presenting your paella just as someone announces they won't eat shellfish, or that they are vegetarian.
4. Try to match wines with your courses and politely accept wines that arrive as hostess gifts by announcing you will look forward to using them on some future occasion. Sparkling wine will go with many difficult to match dishes and try to have options of both red and white for each course in case someone insists on one or the other despite your recommendation. The right wines add as much as 50% to the enjoyment of the meal.
5. Don't try to use expensive ingredients unless you really need them and know how to use them. The talents and abilities of the cook are more important than the cost of the ingredients.

Chicken, pork, fish, goat and even ox tail? Thats a a lot of meat to prepare and cook. Is all this even going to be ready on time? Or is it like a restaurant with numerous cooks working off numerous stoves?

Hopefully no vegetarians are coming otherwise they'll be eating parsley.

Majority of it is done in the oven. ox tail takes the longest so that will be cooking for 4 hours, goat takes about 2 hours. fish and chicken about 50 minutes.

Plus there will yams, potatoes, pasta salad, white rice with mixed vegitables, platain, and fried dumplin and carrots and brocolli and a house salad.

and also sodas and juice no alcohol. There will be pictures of the food and maybe some youtube clips of me preparing and having a grand ol time. I dont think my guest will like to be filmed or photographed some might appear on my facebook page.

Seems like I have an interesting guest list which I am happy about. A few Sps are coming that I admire and some "normal" folk.

I hope there is enough food to make everyone happy. since it seewms to be alot of food Lisa feel free to come in early and help me prepare.

Saturday I will be setting up all the food that has to be marinaded over night.
