Some ladies will hold back stating her offerings (when they can, depending upon law and custom) because it seems some blokes don't fully comprehend ymmv. Moreover, if she instead lists it as ymmv, and the client is not allowed it, then the client feels rejected. Thus easier for her to say not on her menu. And, if she decides the client is right and respectful and clean, then she can offer privately. Makes it easier to handle the lads who don't appeal to the positive side of her ymmv standards.
I think it a smart move.

I got one of the rarest off menu items of all, I would be surprised if anyone else got it.

I was doing the back door rumba with an SP, when I was all done I pulled out. That is when I got the off menu item. I got squirted on the leg. It was not the squirt you usually get, and it did not come from the place that usually squirts. Some guys would pay extra for that, but it is not my cup of Java, if you know what I mean.
