There's an awesome BBQ place in Bellevue, WA (near Seattle) called Dixies BBQ. Wins best BBQ in Seattle area year after year ...... run by husband Porter and wife Dixie. Dixie (and her mom if she's still alive) makes the food and Porter makes "the Man". Dixie also has some jazz CDs for sale there ..... they're from Louisiana.
The place was an auto transmission shop years back and highway 520 ran right beside it. While doing some work on that stretch of 520 workers noticed a heavenly smell coming from the transmission shop mid to late mornings. They yelled to Porter that he was driving them nuts, he had some 55 gallon drums welded into a huge BBQ cooker with which he treated his employees and customers. He invited the workers for lunch and they convinced him & Dixie to convert the trans shop into a restaurant. Thus, Dixies was born.
1st time at Dixies you have to "meet the Man", they sell Tshirts and bumper stickers for people to boast they've met the Man. The Man is in a little sauce pan that Porter walks around the place with, ready to spice up your BBQ. Most people have a hard time with a toothpick dipped in the sauce. Wickedly good stuff.
It was a sort of initiation for new co-workers where I worked to meet the Man. I took a Korean fellow there who convinced Porter I needed a spoonful of the Man on my 520 special even tho I had previously tried a toothpick and nearly died. Not a huge hot stuff guy. 1st bite nearly killed me then nirvana set in and I blissfully finished the sandwich. The Man did not drown out the sandwich, it enhanced it wonderfully.
That night I experienced the infamous "rim of fire".
I digress ..... got off track but the background helps and the story is interesting, at least to me. All over Dixies they have large jugs filled with peanuts in the shell. After trying the Man Porter will tell you about the peanuts if he feels like it. Helps ward off the rim of fire and restore sanity. Since it's a converted repair garage no one cares if there's peanut shells here and there.
Try it, buy them in the shell. For some reason shelled peanuts do not work as well. If you ever visit Seattle be sure to cross the 520 bridge, get off the 1st exit in Bellevue and look for Dixies. Make sure to try the red beans & rice and the lemon cake! And drop a buck into the peanut donation jar to help out those who follow ......
