Grew up with a mum that if a steak had pink in it, it was not fully cooked yet lol. But we didn't have it alot and the cuts of meat were the cheaper cuts that were pretty rugged as well done. Did have to use hp or BBQ or ketchup on the meat to get it down lol.
Now - medium rare.

Medium Rare, but most clowns in kitchens these days have no idea what that is so it’s nearly always delivered to the table Rare.

I now order Medium and get a perfect Medium Rare
Unfortunately due to covid a lot of institutional knowledge was lost in many restaurants. I've noticed this as well.

I usually cook a steak at home. When out at a steakhouse if they have MR prime rib is my go to. I can cook a steak but getting a good slow roast PR is a treat.

Why bother? Just eat hamburger. It will taste the same.
I eat both. but steak it has to be well done people think well done tastes dry or whatever but that's not 100 % true there are people who know how to make a tasty well done steak it all depends on who is cooking the steak and how are they cooking it

U can have hundreds of people making the same dish and same recipe but all of them well taste different

Meat cut if waaay more important than how you cook it. Some cheaper cuts can be cooked whichever way and it'll taste like a cheap cutlet. Premium meat though like a Ribeye, Porterhouse, Tenderloin etc. It'll taste amazing. Season it, flavourize it and enjoy.

OP, spoken like a true Greek man lol.
In the very rare instance that I eat red meat, there is no better way than Chicago medium for me.
The more charred the better.

Until you have eaten a Medium Rare Striploin or a Rare Filet you won't understand. My SO used to say the same thing. Now she is a rare/mr person. Same with my dad.

I can slather anything in sauce and over seasoned. But just a pinch if salt and pepper is all that is needed on a t-bone.

I did have a rare fillet once.
Almost gagged and threw up as the outside was so well charred but the interior texture was a total turn off.
Medium on a fillet is perfect imo.
Ribeye medium well, as the fat needs to render for me.
