Pigeons supposed to be good eating, but yes KFC pieces are very small, I tried popeyes their pieces are bigger. I buy this type of food only as a last resort.It is no longer KFC, it is KFP ( pigeons ) The chicken pieces are so small I wonder if it is real chicken. You also get a rubbery skin under the breading. It makes no difference to KFC if the recipe is out. If you had the Coca Cola recipe would you go and make some for yourself?

I agree with Roxy that the stuff you buy at KFC is not the most healthy to eat, but if you eat it a few times a year, then you should be fine. I do find that the store bought KFC is quite salty as I tend to wake up in the night reaching for the water bottle.
That being said, you can make this a number of different ways at home - Fry in oil, bake in the oven, on the BBQ, etc. The key is the spice/flour mixture. Personally I prefer to bake it in the oven or make on the BBQ (indirect cooking on the BBQ).
Per the actual mixture the key ingredient for years has been white pepper. If you research the copy cat recipes that have been around for years, they all missed white pepper or if they had it, it was not in the quantity the old recipe states.
When I make it, I do not brine the chicken, I cut down on the salt, and cut back a little on the white pepper as I found it was too strong.
Fried/baked chicken is so easy to make and you can experiment with so many different spice mixtures.
