The early days of Orsara Recipes. Chef Pasquale Scirappa making Pizza alla Pecoraia (Shepherd's Pie)....while getting totally shit faced on wine. This is before he got professional help for the camerawork and editing, his grandchildren were at the controls.

Unlike Miserable Prick, John Kirkwood is a very humble chef who rarely leaves his hometown of Sunderland. Here's a reconstruction of his studio, as a once wheelbarrow man, it brought back memories.

Having 2 kids I made hundreds of paté chinois in my life... And still go on!

My secrets?? I mixed a can of lentils with the ground beef. Seasoned only with Worcestershire sauce, pepper and parsley. Be generous on the corn, I always use a mixed a creamy and grains. A touch of butter on the potato will do wonder.
Of course to be eaten with Ketchup or my mother own ketchup which is unbeatable ;)

Seriously my kids will prefer a paté chinois then going to mcdonald ;)

If you get a chance also try the smoked meat. I haven't been back to Montreal in a while.
When I'm in Montreal I always have the smoked meat, as Frank Zappa says, "I'll leave the poutine to somebody else".

One of the reason's why I admire John Kirkwood, he's a very talented baker. When it comes to baking I'm kaka.

Probably the wrong time of the year to post this. Shepherd's Pie is the ultimate winter feel good dish.

Dude!!!! Thanks for posting this. So funny, just last week I was looking for recipes for this. I was so frustrated cause like so many recipes out there on youtube and internet, they over complicated it. Even when you search "basic sheppards pie". People start adding all kind of stuff. This one is old school. Just basic.

Pizza means pie in English. Just like scrofa means ditch pig or Asia Argento...take your pick.

Anthony Bourdain had it good when he was married to Ottavia Busia, she is an athlete not a chef nor entertainer. She got him healthy. On No Reservations he left Rome late, when he finally got there he was smitten. Bourdain followed it up with two more episodes on Rome, the last featuring Francis Ford Copolla. Bourdain confessed that he always wanted to be Italian-American, after visiting Rome he wanted to be Roman. His marriage ended when Bourdain chose his career over his marriage, Ms Busia was sick of traveling. She left him during the making of the Napoli episode. Bourdain was so blinded by being Roman that he couldn't see that Asia Argento is a scrofa.

Ottavia (Bourdain) Busia is a Jujitsu black belt.

Ben's was our go to smoked meat place. I think they lost so much business when our old McGill gang dispersed to the 4 corners of the world.

I'm thinking of organizing a reunion of the old McGill gang. I think we're now too old and fat to play mixed gender nude football again.

I tried making this one cause it looked pretty good, but it didn't turn out that good and way to much work:
I've never actually tried to make it at home, mainly due to me not wanted to clean up the mess. Longo's actually makes a good Shepherd's Pie which surprises me.

One of my favourite comfort foods. Plus with my work schedule, I typically make a few, store in freezer. Then take out, thaw and once home 35 min in the oven.

I make mine with ground venison. No fat and far healthier.

If your talking about the one they sell at the hot table, I've had it. It's okay but nothing to write home about.
