I just follow Canada's Food Guide, making sure serving sizes are according to their recommendations. It works and I don't have to worry about cutting carbs (why would I do that, I love them). I exercise daily and I haven't been healthier.

Leave the fad diets in the women's magazines. A diet is the worst thing to do. As you've noted, it's too restrictive and anything that makes you feel like you're losing out will eventually fail. The key is a healthy, gradual shift in lifestyle.
I started the year off at 263. Been obese my entire life and hated myself. I made a habit of hobbying to release stress, and then completed the visit by a stop at any nearby pizza place for 2 slices of meat lovers afterwards. I smacked all day on fatty comfort food (street dogs, poutine, McD's breakfast, Five Guys).It had to stop. It was killing me.
First thing I did was download a food diary app on iTunes called MyFitnessPal. It's got a huge database of food and calories and nutrition. All I had to do was estimate the amount (not hard, and I always guessed high). It's even easier when you eat at chains as the exact calories are listed (eg.Subway tuna sub, 6").
Having it was an eye opening experience right away. You really see where the calories come from. You have to commit to entering everything, even handfuls of pretzel chips etc. once you start to log your food, it's simple math of calories in vs. out.
I'm 6 months into it and just weighed in this morning at 215 lbs. I've donated 6 black garbage bags of clothes last month, have new wardrobe for the summer, and I'm still at it for my ultimate goal of 180lbs. I'm giving myself until Dec for that. It's been an effortless, craving less, logical way to go. No magic recipes, no restrictions as long as I'm in budget. Only thing that's changed is I've willingly deleted empty calories from my food (cheese, white bread and rice, excessive beer, fatty meats) as the app shows me that it's not worth eating it as I'd rather use my food credit towards something else. I am never hungry but sometimes I still crave pizza so I grab a slice of Veggie Delight at Pizza Pizza that's filling, makes me happy and is only 180 cal.
It's a long journey but it took me 40+ yrs to get to 260+ so I'm patient

Protein doesn't have to turn into fat. It already contains plenty of it in its' original form. (Different proteins contain different amounts of fat i.e. marbled steak vs. chicken.)while protein does turn into fat it is sugar and starch that is the worse fat producer

count the carbs IE starch and sugar EG just look at carb count on the label then subtract fiber and sugar alcohol , the rest is starch or sugar (they do not mention starch so you have to subtract then what is leftover is starch)
In fact, do not even bother to count
just do not eat it if the count is high
while protein can turn into fat if ate in excess, it is sugar and starch that is the worse fat producer

I slowly lose weight because I drink
While alcohol has no carbs, your body burns the alcohol for energy before fat so it slows the burn down considerably
There is low carb wine called Skinny Grape and low carb beer both lower in alcohol as well as carbs

Lift weights to lose even faster as your growing muscles will burn fat for energy
Fruit has carbs, especially fruit juice, so lose the apple juice
Juicer are BS IMHO, how do they release the nutrients and do we need more nutrients are questions you should ask yourself as you take out the fibre which we do need more of and even veggy juice has too much sugar and starch
lose any veggy that grows under ground IE beets, carrots as they are stored starch which your body converts to sugar which converts to fat
eat all the leafy greens you want IE spinach as very little carbs and lots of nutrition
A salad with zero carb dressing and tuna and nuts is a great snack
cauliflower and cabbage and meat to make this tasty item
use low sodium broth and extra lean meat
Eat all the fish and meat you want just cut the saturated fat out of the meat for health reasons
you can buy low carb bread at low carb stores
Eating raw is nonsense as cooking actually helps body get rid of carbs

Some bad news is your initial lost weight may be water as you have restricted salt which retains water so that does not count
Sleep apnea is a serious problem, if you have insurance the cost of everything will be a couple hundred if not then perhaps $1000
the mask is not big deal at all as I do not even know I got it on
weight is not the initial cause of apnea it just contributes to it
