My special recipe for a shore lunch of pickerel was to soak the fillets in canned condensed milk, then dip in cornstarch. Let the cornstarch firm up while you get your canned maple beans and canned potatoes (sliced and fried) ready. Then dip the fillets in an egg and little bit of condensed milk wash, then dredge in crushed ridged (like Ruffles-but it was PC Chips back then) Salt and Vinegar chips.

Then pan fry them in lard in a big stamped carbon steel campfire frying pan.

Fuck me, it was great!

All the other fishermen and/or guides had our own recipes. Some liked pancake batter mix with beer. Rocky Madsen was a real estate agent back then and came up with his own fish batter recipe that I think is still sold in stores.

Unspoken shore lunch rule was that everything in the shore lunch had to be canned or otherwise not needing refrigeration.
Perhaps you've heard of Henry's in the Georgian Bay area that's famous for its pickerel and you can only get there by boat or floatplane. There's also one in Midland as far as I can remember.

McNies near Burnhamthorpe and Martin Grove was also quite good. Haven't been there in ages so who knows if it's still good. Naturally, there's a church nearby.
they sold. New owners raised prices and lowered quality. Not to be racist, but being racist… To be expected by the new owners. Money, money, money money money. 🐱

Went to New Toronto many times. Long Branch Fish and Chips was also quite good, but it closed a while ago. There is a chain place called Halibut House, which is decent and they're all over the place.
some some of the halibut house franchises are good, really good!

Some not so much

of course!!! Many many many times. But, be honest, the past decade or so it’s been less than great. They have to bring their fish in from Lake Erie. And I find them product a bit greasy.

Killarney’s school bus and the Killarney Mountain Lodge are fantastic! Pickerel is less abundant or more difficult to net up there with Georgian Bay whitefish being the regular feature!

I thought the point of a chain is consistency. I guess not 🤓
again, not to be racist… But being racist… some people are known to buy existing restaurants and then try to cut every corner possible to be cheap cheap cheap because the ONLY thing they care about is money money money money.. today. 🐱 🤚
halibut house in Uxbridge, for example, over uses their oil so it goes rancid. And I think they must hire an Italian barber to shave the halibut that thin!

On the other hand, the halibut house down in South Etobicoke is really quite good.

The point of most franchises is franchise fees! Just raking off as much as possible. So long as the franchise fees keep coming in, most of these small franchise companies don’t enforce quality standards.

On the other hand, the halibut house down in South Etobicoke is really quite good.

@SchlongConery you know your fish n chips very well. You must know Lipitor very well too 🤓
<burp>

Actually my bad annd total cholesterol is good. Maybe a bit low on the HDL.

I may eat fish and chips once a month or maybe even less. But over the years you get to learn what places are good or not. And I tend to explore places that seem exceptional in some way or another. I dont eat out so much as I used to.

Try Wanda's Pie in the Sky bakery in Kensiington.
Oh, you mean the place that's been shut down several times for health code violations and one time I went there, there was a dead roach in the forks?

And it's name was "Wanda's Rat in Your Pie" for a while?

I didn't know that. Seems like they run a clean, sanitary place to my eye but I'm now interested to know more.

So I did a quick google search and turned up the following facts:

SPOILER ALERT!!!! According to the public records Wanda's has never been shut down.

Wanda’s Pie In The Sky at 287 Augusta Avenue received a conditional pass with one major infraction:
  • Fail to protect against harbouring of pests

I then went directly to the City of Toronto website and got their full history:

Current status: PassLast Inspected: February 28, 2024Establishment Address: 287 AUGUSTA AVEObservation: No infractions were observed under the Food Premises Regulation during an inspection.

Past Inspection Results

That's good to hear, still, the dead roach thing did put me off going back there.

Which is too bad because they did have really solid cakes and pies. They also had really good gourmet hot chocolates.

I imagine it is near impossible to keep insects out of restaurants. Especially when they are in old buildings, joined to other buildings, with residential apartments upstairs etc.

I have had coffee with Wanda from time to time and she strikes me as really caring about her business, customers, employees and food. So she gets an A for effort from me.

What worries me more is Asian owned restaurants where you can tell they try to cut every corner, re-use old oil, hold or refrigerate leftover food too long instead of tossing it out etc. Or bad refrigeration. Those are the types of things that make you sick. And bad handwashing which is a factor of leadership.

I'll still eat a cream pie from Wanda any day!

Wow, that's clever. Too bad crab legs don't stack as well.

LOL

Last time I ate at a buffet was in Vegas about 10 years ago. This fat pig was mowing through crab legs like an octopus throwing them into her woodchipper of a mouth. Barely took the time to get half the meat out of each leg.

The grotesqueness of the waste and gluttony turned me off buffet's ever since. I do admit to missing Tucker's Marketplace and the old Ponderosa Salad Bar though! But I find Mandarin gross and overpriced.

The Brazillian steakhouse in Toronto is good for the variety.
